1. Form Beef Balls
Gently knead the ground beef into four evenly sized balls. Place them on a baking sheet lined with parchment paper and refrigerate to firm up.
2. Prepare Patties
Press each beef ball into a 3-inch wide patty on a sheet pan or large plate. Season with kosher salt and freshly ground black pepper and press a generous handful of thinly sliced onions into the meat.
3. Cook Patties
Heat a skillet or griddle until hot. Lay the beef and onion patties onto the surface, press down firmly, and cook without moving for 1 to 2 minutes, or until a crusty edge forms. Flip and cook for another minute or two on the other side.
4. Melt Cheese and Toast Buns
Place a slice of American cheese on each patty and put hamburger buns cut side down on the skillet or griddle. Cover with a lid or towel for a quick steam session, about 1 to 2 minutes.
5. Assemble Burgers
On the bottom bun, add dill pickle chips and condiments. Place a cheesy beef patty with onions on top, and cap with the top bun. Serve immediately.
