1. Roast the Broccoli
Preheat your oven to 425°F. In a large bowl, toss 2 pounds of bite-size broccoli florets with 2 tablespoons of extra-virgin olive oil, 1 teaspoon of whole coriander seeds, 1 teaspoon of whole cumin seeds, 1 teaspoon of kosher salt, ½ teaspoon of freshly ground black pepper, and 1/8 teaspoon of hot chili powder. Spread the seasoned broccoli onto a baking sheet in a single layer and roast in the oven for 10 minutes.
2. Prepare and Add the Shrimp
While the broccoli is roasting, in a separate bowl, combine 1 pound of shelled and deveined large shrimp with 2 tablespoons of extra-virgin olive oil, 1¼ teaspoons of lemon zest, ½ teaspoon of kosher salt, and ½ teaspoon of freshly ground black pepper. After the broccoli has roasted for 10 minutes, add the shrimp to the baking sheet, toss together, and return to the oven for another 10 minutes, tossing halfway through, until the shrimp turns just opaque and the broccoli is golden around the edges.
3. Serve the Dish
Once the shrimp and broccoli are done, serve hot with lemon wedges on the side.
Make sure both the shrimp and broccoli are thoroughly dried with paper towels before roasting. Moisture is the enemy of roasting; it creates steam and can prevent browning.
Preheat your oven to at least 425°F (218°C). This high heat is critical for achieving a caramelized exterior on the broccoli and shrimp without overcooking.
