1. Preheat Oven and Prepare Broccolini
Preheat your oven to 400 degrees Fahrenheit. Prepare the broccolini by discarding the tough bottom halves of the stems, then cut the remaining stems lengthwise and separate the florets.
2. Season and Roast Broccolini
Place the prepared broccolini on a sheet pan, drizzle with olive oil, and sprinkle with kosher salt and freshly ground black pepper. Toss until evenly coated and roast in the preheated oven for about 10 minutes.
3. Add Cheddar and Finish Roasting
