    How to Make Sunny-Side Up Egg & Cheddar Breakfast Burgers with Spicy Mayo

    1. Cook the Bacon

    Start by cooking the bacon in a large skillet over medium-high heat until it turns crispy. This will take about 8 minutes, flipping the slices halfway through to ensure even cooking. Once done, set the bacon aside on a paper towel to drain excess fat.

    2. Form and Season Burger Patties

    Take the ground beef and form it into two burger patties. Use a small glass or cookie cutter to cut out the middle of each patty. Don't waste that cut-out meat; add it to the edges of the patties to keep them substantial. Season both sides with pink salt and freshly ground black pepper.

    3. Cook the Burger Patties

    In the same skillet, melt 2 tablespoons of butter over medium-high heat. Place the burger patties in the skillet and cook them on the first side for about 2 minutes. Then, flip the patties and carefully crack an egg into the middle of each one. Let them cook for another 1-2 minutes. You'll know they're perfect when the egg whites are set but the yolk remains runny—this creates the ideal sunny-side-up egg without overcooking.

    4. Melt the Cheese

    Now, top each patty with a slice of Cheddar cheese. Immediately turn off the heat and cover the skillet with a lid. This will allow the cheese to melt beautifully over the patties within 2 minutes.

    5. Assemble the Breakfast Burgers

    To assemble your breakfast burgers, place the patties on plates, then top each one with two slices of crispy bacon. Finally, add a generous dollop of Sriracha Mayo to each burger. Serve immediately and enjoy this delicious start to your day.
