How to Make Springtime Asparagus, Ham, and Gruyère Frittata

1. Preheat the Broiler

Adjust your oven rack so it sits about 5 inches from the broiler, and then preheat the broiler.

2. Prepare the Egg Mixture

In a medium bowl, whisk together the large eggs, half-and-half, salt, and pepper for about 30 seconds until everything is well combined.

3. Cook the Asparagus

Heat 2 teaspoons of olive oil in a 12-inch oven-safe nonstick skillet over medium heat. Add the asparagus and cook for about 3 minutes, stirring occasionally until it starts to soften.

4. Add Ham and Shallot

Add the ham cubes and minced shallot to the skillet. Cook everything for another 2 minutes, allowing the flavors to meld and the shallot to soften.

5. Stir in Gruyère Cheese

Stir the Gruyère cheese into the egg mixture. The cheese will start to melt a bit.

6. Add Egg Mixture to Skillet

Pour the egg mixture into the skillet with the asparagus, ham, and shallot. Stir gently and continuously with a heat-resistant rubber spatula for about 2 minutes until the spatula leaves a trail but the eggs are still wet and slightly runny.

7. Set the Bottom

Spread the egg mixture evenly in the skillet and let it cook without stirring for about 30 seconds to set the bottom.

8. Broil the Frittata

Transfer the skillet to the oven and broil the frittata for 3 to 4 minutes until the top is puffed and lightly browned, with the center still slightly wet when cut.

9. Let the Frittata Set

Remove the skillet from the oven and let the frittata sit for about 5 minutes to finish cooking and set.

10. Serve the Frittata
