1. Beat Eggs and Season
Crack the eggs into a bowl. Lightly beat them with a fork or whisk until just combined, then season with a generous pinch of salt and a dash of pepper. Add herbs if desired.
2. Melt Butter
Heat a heavy-bottomed pan over medium heat. Add the butter and let it melt completely until it finishes foaming.
3. Cook Eggs
Pour the seasoned eggs into the pan. Let them cook undisturbed for a moment to form curds. Gently push them around with a spatula or spoon as they begin to set at the bottom. Continue cooking until the eggs are slightly looser than your desired consistency.
4. Serve Immediately
