How to Make Golden Asparagus, Ham, and Gruyère Skillet Frittata

    1. Preheat Broiler

Preheat your broiler and adjust the oven rack to be 5 inches from the broiler element.

    2. Whisk Eggs

Whisk together the eggs, half-and-half, salt, and pepper in a large bowl until just combined. This should take about 30 seconds.

    3. Cook Vegetables and Ham

Heat a 12-inch oven-safe nonstick skillet over medium heat and add a bit of oil. Once the oil is shimmering, add the asparagus and ham. Cook them until the asparagus is tender and lightly browned, and the ham is warmed through.

    4. Add Cheese to Egg Mixture

Stir the Gruyère cheese cubes into the egg mixture, ensuring they are evenly distributed.

    5. Combine Egg Mixture and Vegetables

Pour the egg mixture over the vegetables and ham in the skillet. Cook the eggs over medium heat, gently stirring and scraping the bottom of the skillet with a heat-resistant rubber spatula for about 2 minutes, until large curds form and the mixture is still very wet. Shake the skillet to distribute the eggs evenly and use the spatula to even out the top of the frittata.

    6. Broil the Frittata

Transfer the skillet to the preheated broiler. Broil the frittata for 3 to 4 minutes, until it has risen and the surface is puffed and spotty brown. When you check with a paring knife, the eggs should still be slightly wet and runny.

    7. Rest and Serve

Remove the skillet from the broiler and let it stand for 5 minutes. Slide the frittata onto a cutting board and cut it into pieces to serve.
