1. Prepare Dough and First Rise
Prepare your focaccia dough according to your favorite recipe and allow it to rise until doubled in size.
2. Second Rise
Line a sheet pan with parchment paper, drizzle with 1 tablespoon of olive oil, place the risen dough onto the pan, gently pressing it into the corners. Allow it to rise for a second time for about 30 minutes.
3. Preheat Oven and Add Toppings
Preheat the oven to 400°F (200°C). Scatter black grapes and torn Taleggio cheese evenly across the dough surface, pressing them slightly into the dough. Drizzle with 2 tablespoons of olive oil, sprinkle with fresh rosemary leaves and a pinch of flake salt.
4. Bake the Focaccia
Bake the focaccia in the preheated oven for about 30 minutes or until the crust turns golden and the cheese bubbles and browns.
5. Finishing Touches
Once out of the oven, brush the top of the focaccia with the remaining 1 tablespoon of olive oil. Allow it to cool slightly before serving.
