    How to Make Crispy Golden Fried Bread Loaves

    1. Prepare Steamed Breads

    First, prepare your Steamed Breads according to the instructions on page 167.

    2. Heat Wok and Oil

    Heat a wok for about 40 seconds. Pour in 6 cups of peanut oil and heat it to 350ºF. Use a deep-frying thermometer to ensure the oil reaches the right temperature.

    3. Peel and Fry Loaves

    While the oil is heating, carefully peel away any paper from your steamed loaves. Place two loaves on a Chinese strainer and lower them into the hot oil, then remove the strainer. Fry the loaves for 3 to 4 minutes, turning them frequently to ensure they brown evenly to a pale gold color.

    4. Drain and Serve

    Once the loaves have achieved the desired color, lift them out of the oil using the strainer. Allow the excess oil to drain off and place the loaves on paper towels to absorb any remaining oil. Repeat this process with the remaining loaves until all are fried. Slice the loaves and serve them warm.
