1. Prepare the Cabbage
Quarter, core, and thinly slice the red cabbage. Place the sliced cabbage in a bowl of cold water to freshen and crisp up while preparing other ingredients.
2. Sauté the Onions
In a large skillet or casserole dish with a lid, warm the canola oil over medium heat. Add the thinly sliced onion and cook until soft and golden, about 3 minutes.
3. Deglaze with Balsamic Vinegar
Stir in two tablespoons of balsamic vinegar to the skillet with the onions, and cook for about 3 minutes, allowing the vinegar to deglaze the pan.
4. Add Apples
Introduce the sliced tart apple to the skillet and cook with the onions for another 2 to 3 minutes, until they start to soften.
5. Combine Cabbage and Seasonings
Drain the cabbage and add it to the skillet. Sprinkle in the allspice and an additional two tablespoons of balsamic vinegar. Season with salt and toss to coat the cabbage evenly.
6. Braise the Cabbage
Cover the skillet with its lid and reduce the heat to low. Let the cabbage braise for about an hour, checking occasionally until it is tender and has absorbed the flavors.
7. Season to Finish
Finish the dish by adjusting the seasoning with freshly ground pepper and more salt if needed. Optionally, add an extra splash of balsamic vinegar for additional zing.
