1. Cure the Lamb Shanks
Mix together the ground coriander, cumin, caraway, and cardamom with the salt. Rub this spice mixture over the lamb shanks, wrap in plastic, and refrigerate overnight.
2. Braise the Lamb Shanks
Preheat the oven to 275ºF. Place the lamb shanks and sliced onion in a pot, pour in the cola and sour cherry juice, cover, and braise for 4 hours. Let cool and refrigerate overnight.
3. Skim Fat and Reduce Sauce
Skim off the solidified fat from the surface of the braising liquid. Bring the lamb shanks to room temperature. Reduce the braising liquid over medium heat until thick.
