1. Marinate the Sirloin Tips
Combine the marinade and the sirloin steak tips in a 1-gallon zipper-lock bag. Seal the bag well and press out any excess air. Refrigerate the steak tips for about an hour, flipping the bag halfway through to ensure the marinade fully flavors and tenderizes the beef.
2. Prepare the Grill
For a charcoal grill, open the bottom vent completely and light up about 6 quarts of charcoal briquettes in a large chimney starter. Let the coals heat until they are partially covered with ash, then spread them out and allow the grill to heat for about 5 minutes. For a gas grill, turn all the burners to high, cover, and let it preheat for about 15 minutes.
3. Grill the Sirloin Tips
Clean and oil the cooking grate. Remove the beef from the marinade and pat it dry with paper towels. Place the steak tips on the grill and cook them for a total of 10 to 14 minutes, turning as needed. Turn the meat when the first side is well browned, which usually takes about 4 minutes.
4. Rest the Meat
Transfer the grilled steak tips to a carving board and tent them loosely with aluminum foil. Let the meat rest for 5 to 10 minutes to allow the juices to redistribute.
5. Serve
Slice the steak tips thinly on the bias and serve with wedges of lime, orange, or lemon for a bright, citrusy finish.
