1. Heat the Skillet
Start by spreading the canola oil inside a large cast iron skillet using a paper towel. Heat the skillet over high heat until it is lightly smoking.
2. Cook the Beef Patties
Place the two balls of freshly ground beef into the skillet and press them down with the back side of a spatula until they are completely flattened. Season the patties generously with kosher salt and freshly ground black pepper.
3. Add Onions and Cook
Evenly spread the thinly sliced onions over the cooking burgers and press them into the meat with the spatula. Allow the patties to cook without pressing further until they are well browned, which should take about two minutes.
4. Flip the Patties
Carefully flip the burgers with a stiff spatula, making sure to pick up all the browned bits from the skillet. Let them cook until the onions start to soften, which will take about one minute.
5. Add Cheese and Buns
Add a slice of American cheese on top of each burger, then place the top half of the hamburger bun directly on top of the cheese. Put the bottom bun upside-down over the top bun to allow it to steam in the onion vapors.
6. Assemble and Serve
Once the buns are soft, transfer the bottom buns to a plate. If desired, add mustard, pickles, or other condiments. Finally, lift the onions, burger, and top bun together and place them on the bottom bun. Repeat with the second burger, and serve immediately.
Beyond the traditional lettuce, tomato, and onion, try caramelized onions, sautéed mushrooms, crispy bacon, or avocado slices. Pickled vegetables, such as cucumbers or jalapeños, can add a nice tangy crunch.
Introduce different types of cheese into or on top of your sliders. For example, a sharp cheddar will give a different flavor profile than a creamy Gouda or tangy blue cheese. Consider adding the cheese in the middle of the patty for a melty surprise or on top just before they finish cooking for a delightful cheesy crust.
Incorporate ingredients that are rich in umami like Worcestershire sauce, soy sauce, or a dab of anchovy paste into the beef mixture. A sprinkle of Parmesan cheese or a smear of miso paste can also enhance the savory depth of your sliders.
Play with the seasoning of the beef itself. Incorporate spices like smoked paprika, cumin, or a pinch of cayenne for heat. You could also mix in some finely chopped fresh herbs like rosemary, thyme, or cilantro for a fresh flavor boost.
Draw inspiration from various cuisines. For example, add a Mediterranean twist with feta cheese and tzatziki or go for a Mexican theme with a sprinkle of taco seasoning and toppings like salsa and guacamole.
