How to Make Classic Grilled Grass-Fed Chuck Burgers

1. Combine Ingredients

Start by combining the ground grass-fed chuck with a generous pinch of salt, a few twists of fresh-ground black pepper, and the finely chopped garlic. Mix everything together thoroughly, ensuring the seasoning is evenly distributed throughout the meat.

2. Shape Patties

Shape the seasoned meat into four equal patties. Spend a few moments pressing them together firmly but gently, creating smooth edges and making a slight depression in the center of each patty. This helps the burgers cook evenly and prevents them from puffing up in the middle.

3. Preheat Grill

Preheat your grill to medium-hot. Place the patties on the grill and cook them for about 9 minutes, flipping once halfway through. Aim for a slightly pink center to achieve that perfect, juicy medium-rare.

4. Toast Bread

While the burgers are on the grill, take your 8 slices of bread and toast them lightly on the grill as well. This should only take a minute or two, just enough to give the bread a nice crunch and some lovely grill marks.

5. Assemble Burgers

Assemble your burgers by placing the grilled patties on the toasted bread. Add any optional toppings you like, such as grilled onions, fresh arugula or lettuce leaves, and your favorite condiments.

Pitfalls and tips

Minimal Handling

Form patties gently to avoid overworking the meat, keeping it tender and juicy.

Fat Content Matters

Aim for around 20% fat content for juicy, flavorful burgers; blend with fattier cuts if necessary.

Choose Quality Meat

Ensure grass-fed chuck comes from a reputable source for optimal flavor and texture.

Season Generously

Salt the patties just before grilling to enhance the grass-fed beef's earthy flavor without drawing out moisture.

Don't Press Down

Avoid pressing down on the patties while cooking to retain the juices and prevent dry burgers.
