How to Make Chipotle Beef Tacos with Caramelized Onions

1. Caramelize Onions

Heat 1 tablespoon of olive oil in a skillet over medium-low heat. Add the thinly sliced onion, stirring occasionally, until caramelized, about 15 to 20 minutes. Remove onions from skillet and set aside.

2. Cook Beef

In the same skillet, add the remaining tablespoon of olive oil and sauté the minced garlic for about 30 seconds. Add the thinly sliced beef and let it brown for 5 to 7 minutes. Then, stir in the minced chipotle peppers, season with salt and pepper, and cook for an additional 2 minutes.

3. Warm Tortillas

Warm the corn tortillas by placing them in a dry pan over medium heat or using the microwave.

4. Assemble Tacos

Assemble the tacos by laying out the warm tortillas and filling each with the spiced beef and caramelized onions. Add any optional toppings such as cilantro, avocado slices, or a squeeze of lime juice.
