How to Make Chipotle Beef Tacos with Caramelized Onions

    1. Marinate the Steak

Blend the chipotle chiles en adobo into a smooth marinade using a food processor or blender. Brush the marinade evenly over the steak, ensuring a light but thorough layer.

    2. Caramelize Onions

Heat 2 tablespoons of vegetable oil in a 12-inch skillet. Add two medium white onions, sliced 1/4 inch thick, and sauté them for 4-5 minutes until they turn golden yet retain a bit of crunch.

    3. Sear the Steak

In the same skillet, add another tablespoon of oil and sear the marinated steak for about 3-5 minutes on each side, depending on your preferred level of doneness. Allow the steak to rest for 5-10 minutes before slicing.

    4. Slice and Season the Steak

Slice the rested steak against the grain into 1/4-inch thick pieces. Combine the sliced steak with the caramelized onions and season with salt to taste.

    5. Assemble the Tacos

Lay out 12 warm corn tortillas and fill each with the steak and onion mixture. Serve with your choice of salsa or hot sauce.
