1. Marinate the Beef
Season the beef with 2 teaspoons of salt and the ground black pepper, mixing in half of the thinly sliced onion for added flavor. Cover and refrigerate the beef overnight to marinate.
2. Prepare for Cooking
Preheat your oven to 375ºF. In an oven-friendly pot, heat the neutral oil over medium-high heat. Add the garlic and sweet potato quarters, frying for about 8 minutes until they are browned and crusty. Season with ½ teaspoon of salt and transfer to a bowl using a slotted spoon.
3. Brown the Beef
In the same pot, sear the marinated beef chunks over medium-high heat until well-browned on all sides. Then return the sweet potatoes and garlic to the pot, and pour in the red wine vinegar.
4. Cook in Oven
Cover the pot with its lid and transfer it to the preheated oven. Allow it to cook for about 2 hours, or until the beef is very tender.
