A wholesome and hearty vegetarian dish that combines the flavors of sweet caramelized onions, aromatic garlic, earthy beans, spicy chiles, and tender greens.

1. Caramelize Onions
Drizzle olive oil into the pan and set it over medium heat. Once the oil shimmers, add the onion slices. Cook slowly, stirring occasionally, until they turn a rich golden brown.
2. Add Garlic
Add the finely chopped or crushed garlic cloves to the pan with the onions. Stir them for about a minute, just until their aroma fills the kitchen.
3. Simmer Beans and Chiles
Introduce the beans and chiles to the pan. Pour in one and a half cups of water, and let everything simmer together for about 10 minutes, allowing the flavors to meld.
4. Wilt Greens
Wilt the greens in the microwave. Once they're ready, add them to the pan with the other ingredients, stirring gently, and give them just enough time to heat through.
5. Serve
Transfer the mixture to a serving dish and garnish with your choice of herbs, lemon juice, or other preferred garnishes. Serve hot and enjoy.
