How to Make Smoky Chipotle Black Beans

1. Prepare the Beans

Start by combining the black beans, bay leaf, and cold water in a large saucepan. Add the peeled and halved onion to the pot. Bring the mixture to a boil over medium-high heat. Once it reaches a boil, reduce the heat to a gentle simmer. Let the beans cook for about 40 minutes, stirring occasionally. This slow simmering allows the flavors to meld together beautifully and helps the beans become tender while half of the water evaporates.
