How to Make Slow Cooker BBQ Pork and Beans

    1. Season and Sear Pork

Season the boneless pork shoulder with kosher salt and black pepper, then sear in a Dutch oven or skillet with extra-virgin olive oil until browned on all sides.

    2. Prepare BBQ Sauce Mixture

In the slow cooker, whisk together barbecue sauce, chipotle in adobo, and light brown sugar. Adjust sweetness and spice to taste.

    3. Combine Ingredients in Slow Cooker

Transfer the browned pork to the slow cooker, nestling it into the sauce. Add rinsed pinto beans and thinly sliced garlic cloves around the pork.

    4. Cook on Low

Set the slow cooker to low and cook for 8 to 10 hours until the pork is tender.

    5. Shred Pork and Season Beans

Transfer the pork to a cutting board to slice or shred. Skim any excess fat from the beans, and season with additional kosher salt and black pepper to taste.

    6. Serve

Serve the shredded pork alongside the beans for a complete meal.
