How to Make Grilled Pork Spare Ribs

1. Season the Pork Spare Ribs

Season the pork spare ribs with salt and freshly ground black pepper, ideally the night before cooking to enhance the flavor.

2. Prepare the Spice Mix

In a bowl, combine the toasted and ground coriander seeds, fennel seeds, mild chile powder, and sweet paprika to create the spice mix.

3. Apply the Spice Mix

Generously apply the spice mix to the seasoned ribs and let them rest to come to room temperature before grilling.

4. Prepare the Grill

Prepare the grill by lighting the wood or charcoal and oiling the grates with olive oil to prevent sticking.

5. Grill the Ribs

Grill the marinated ribs slowly over a low flame, turning every 10 minutes, for about 1 hour until browned and cooked through.

6. Rest and Serve

Once the ribs are cooked, remove them from the grill, let them rest for a few minutes, then cut into individual portions and serve hot.
