How to Make Olive Oil Granola with Dried Apricots and Pistachios

1. Preheat Oven and Combine Dry Ingredients

Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the old-fashioned rolled oats and hulled raw pistachios.

2. Add Wet Ingredients

To the bowl, add pure maple syrup and good quality olive oil. Stir the mixture well, ensuring each oat and pistachio is lightly coated.

3. Bake the Granola

Spread the mixture in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for about 25-30 minutes, stirring once halfway through, until golden brown.

4. Cool and Add Dried Apricots

Remove the granola from the oven and let it cool completely on the baking sheet. Once cooled, stir in the chopped dried apricots.
