How to Make Effortless Artisan Bread

1. Combine Dry Ingredients

In a large bowl, whisk together the bread flour, salt, and yeast until well combined. This ensures the yeast is evenly distributed and helps your bread rise evenly.

2. Add Water

Gradually add the water to the dry ingredients, stirring with a wooden spoon until no dry flour remains. The dough will be shaggy and sticky, which is exactly what you want.

3. Initial Rise

Cover the bowl with plastic wrap and let it rest at room temperature for 12 to 24 hours. During this time, the dough will become bubbly and expand, developing rich flavors and a lovely texture.

4. Cold Fermentation

After the initial rise, transfer the dough to the refrigerator and let it chill for 3 to 5 days. This cold fermentation period further enhances the bread's flavor and makes it easier to handle.

5. Shape the Dough

When you're ready to bake, turn the dough out onto a well-floured surface and shape it into a loaf. Let it rise at room temperature on a well-floured kitchen towel for 2 to 4 hours, turning it once or twice to help it hold its shape.

6. Preheat Oven

Preheat your oven to 450°F (230°C) with a heavy cast-iron or stainless steel Dutch oven inside. Position your oven rack in the lower-middle to ensure even baking.

7. Slash the Dough

Just before baking, use a floured knife to slash the top of the dough 2 or 3 times, about 1/2 inch deep. This allows steam to escape and helps the bread expand properly in the oven.

8. Bake the Bread

Carefully transfer the dough to the preheated Dutch oven, cover it with the lid, and bake for 15 minutes. Remove the lid and continue baking for an additional 30 to 45 minutes, until the bread is golden brown and the center registers 209°F (98°C). The initial covered bake creates steam, which helps the dough rise and form a perfect crust.

9. Cool the Bread

Transfer the bread to a wire rack and let it cool for at least 15 minutes before slicing. This cooling period allows the bread to set, making it easier to slice and enhancing its flavor.

10. Store Leftovers

Store any leftover bread wrapped in foil at room temperature for up to 3 days. If needed, refresh it in the oven or toaster before serving to bring back its crispiness.

Olive & Rosemary Bread

Add 1 cup of pitted, chopped olives and 2 tablespoons of fresh rosemary.
