1. Fruit Mixture Preparation
Combine the dried berries and cherries in a bowl. Pour the hot tea, fresh orange juice, and zest over the dried fruits. Cover with cling film and allow the mixture to steep for a minimum of 4 hours or, ideally, overnight.
2. Cake Assembly
Set your oven to 180°C (160°C fan-assisted or gas mark 4). Prepare a 2lb loaf tin by greasing it and lining the base with parchment paper.
3. Creaming
In a mixing bowl, cream the softened butter and light brown sugar together until it's light and fluffy. Beat in the egg until well-combined.
4. Dry Ingredients
Gently fold in the self-raising flour into the creamy mixture.
5. Fruit Incorporation
Stir the plump fruit mixture into the batter until evenly distributed.
6. Bake
Transfer the cake batter into the prepared loaf tin, evening out the surface with the back of a spoon. Generously sprinkle the top with demerara sugar to create a crunchy glaze.
7. Cooking Time
Place in the center of the oven and bake for approximately 1 hour, or until a skewer comes out clean when inserted into the center of the loaf.
8. Cooling
Allow the loaf to cool in the tin before turning out. Once cooled, slice and serve.
