1. Combine Yeast Mixture
Combine the active dry yeast, warm water, and olive oil in the bowl of a stand mixer or a food processor. Let the mixture sit for about 5 minutes, until the yeast becomes foamy.
2. Add Flour and Salt
Add the all-purpose flour and kosher salt to the yeast mixture. Beat or pulse the mixture for 2 to 3 minutes, until the dough is smooth and slightly elastic.
3. First Rise
Lightly oil a bowl with extra-virgin olive oil. Place the dough in the bowl, turning it once to coat it with oil. Cover with plastic wrap and refrigerate for at least 24 hours, or up to 48 hours.
4. Divide and Rest Dough
Divide the dough into two equal parts. Shape each piece into a ball and place them on a baking sheet. Let rest at room temperature for at least 2 hours, or up to 12 hours.
