How to Make Creamy Avocado-Lime Dressing

1. Prepare Avocado

Gently toss the avocado pieces with 2 teaspoons of fresh lime juice in a small bowl. This step not only prevents the avocado from browning but also infuses it with a bright citrus flavor right from the start.

2. Combine Egg Yolks and Lime Juice

Combine the egg yolks, the remaining 4 teaspoons of lime juice, and 1/2 teaspoon of kosher salt in the bowl of a food processor. Pulse the mixture until the yolks are evenly blended. This is crucial because it sets the foundation for a stable emulsion, ensuring your dressing will have a smooth and creamy texture. You might notice the yolks spraying onto the sides of the bowl; that's perfectly fine.

3. Add Oil

With the food processor running, begin adding the oil in a slow, steady stream. This slow addition allows the yolks to absorb the oil properly, which is key to achieving that velvety consistency without the oil separating. Stop occasionally to scrape down the sides of the bowl with a rubber spatula to ensure everything is incorporated evenly.

4. Add Avocado

Once the oil is fully integrated and the mixture is smooth, add the avocado chunks. Process everything until the dressing is completely smooth.

5. Add Lime Zest

Add the finely grated lime zest and pulse a few more times to mix it in.

6. Adjust Seasoning

Taste your dressing and adjust the seasoning with additional kosher salt and fresh lime juice as needed. This ensures the balance of flavors is just right.
